There's many many VAs out there.
Best stick with the large old ones, they're usually more stable (many fail a few weeks or months after starting out) and offer better services (aircraft, support, etc).

Personally I fly (and do other things) for TradeWind Caribbean Airlines (http://www.tradewind.org )
one of the oldest and largest VAs there is (probably THE oldest still existing VA in fact, now over 8 years old and still going strong).

Experience counts, in time VAs can build up extensive support networks.
For example we have a complete fleet preparation team doing not only painting of the aircraft but also tweaking of flight dynamics and packaging in nice installers.
We sometimes get discounts on payware addons when buying as a group.
We have several scenery designers creating custom scenery for us, etc. etc.
